About company (redbrick retail private limited) this company is a food-Tech startup based in patna. It was founded in the year 2019 with a vision to make a set of leading home grown food & beverage brands. With more than 10 units and two brands the company is currently involved in operations across three states i.E. Bihar, karnataka & uttar pradesh. Cafe hideout & biryani grills are two F&B brands which are present on streets and serve the guests. Both the brands work on hybrid models serving online as well as offline customers. Currently the company serves more than one lakh customers every month and the count is growing on a monthly basis. Job purpose 1- Responsible for maintaining a suitable inventory of food and beverage items at all outlets. He/she should be able to keep the F&B expenses under permissible limit at all the outlets. 2- Responsible for calculating costs of food and beverage items, controlling and pricing aspects. He/she is required to prepare and update at all times the costing of all menu items and actively take part in engineering the menu in terms of the pricing. Duties and responsibilities ensuring that we have recipe for each of the items in our on the recipe he/she should have item wise costing for each of the items in our menu. 3) based on the cost of making of an item he/she has to engineer the pricing of that item in the menu also keeping the market and customer base in mind. 4) control the food and beverage expenses in outlets by controlling wastage and pilferage. 5) recipe for each of the item has to be updated in the inventory related software. This software has to be used for both inventory purpose and for calculating the consumption of any particular raw material. 6) preparing daily consumption report and acting strictly upon the differences found at unit level. 7) continuously study weaknesses in F&B control implemented and provide suggestions for improvements. 8) after finalization of recipe for each of the item it is equally important to implement it in all of the outlets so that item wise consumption report does not vary unit to unit. Also work on the portioning of raw materials especially high consumable items like chicken, paneer, oil etc. 9) submit monthly F&B report for management review. 10) conduct surprise spot checks at all F&B outlets. 11) participate or prepare a guy in each outlet for stock receiving and verifying at the restaurants. Checking both quality and quantity of raw materials at the time of receiving the material from vendor only. Record shortages and reject damaged items and inform about it to both vendor and accounts department. 12) ensuring that opening & closing of stock is done on daily basis in each of the outlet without fail. 13) check and ensure that no material is issued out from the store without requisition or approval from the respective department head. 14) coordinate with restaurant management, operations and finance to sort out issues pertaining to F&B. 15) perform regular material warehouse audits to ensure that material is undamaged and maintained neatly throughout the stores. 16) ensure that all the raw material received in the stores or directly delivered to units are of satisfactory quality and of approved brands. 17) prepare daily staff menu & meal cost report. 18) any other tasks as and when required by the management. Prerequisites good verbal and written communication analytics and reporting with accounting system, pos systems and cost and inventory to handle multiple a high-Level attention to to work independently and to partner with others to promote an environment of teamwork. Experience at least 3 years experience at the same role with an up-Scale (4/5 star) hospitality environment.
